Let’s start by heating up our grill and spraying one side of our tortillas with cooking spray. The spray will help crisp up the tortillas and keep them from sticking to the grill.
Place your tortillas cooking spray side down on your grill (I kept mine at medium heat) and start building your quesadillas with a handful of cheese.
I decided to also sprinkle a little Mexican blend seasoning on my cheese…
Time for the fillings!
You can take these quesadillas in so many directions. Black beans, olives, fresh tomatoes, cooked ground turkey, fresh spinach, shredded chicken… This list could seriously go on and on!
I kept mine simple with a few slices of bell pepper and fresh corn kernels.
Place another tortilla spray side up over your cheesy creation. With a spatula carefully flip your quesadilla once the bottom tortilla is crisp.
