So I didn’t use a fancy mixer to make these, because I don’t own one, because I don’t bake a ton, & it worked out just fine.
Pre heat your oven to 350 & bust out a medium size bowl and whisk together 2 cups of flour, 1/2 cup of coco powder, and 1 tsp of baking soda.
In larger bowl (or your fancy mixer) beat 1 cup of softened butter with 3/4 cup of white sugar, 3/4 cup of brown sugar, and a good pinch of sea salt until it’s smooth. These cookies are pretty sweet and the salt helps cut through that & it also adds another flavor to the party.
Add your eggs one at a time to the butter sugar mixture, and a tsp of vanilla. Beat with your mixer.
Now your going to want to add your flour/coco mixture to your butter/sugar mixture 1 cup at a time until it’s all in there. Beat this in with your mixer.
How yummy does that batter look?! Chocolate heaven!
Ok last step, dump a bag of chocolate chips in your bowl and with a spatula fold them in. I used milk chocolate chips, but you can use any kind you want (ahhhh freedom.)
A little elbow grease is required here. I know you can do it!
Line some baking sheets with parchment paper, grab a couple of spoons and drop the batter onto your sheets.
Cookie sheets, not your bed sheets…. Shesh, get your mind outta the gutter!
Depending on how hot your oven runs, 9-12 minutes is all cooking time these beauties need. Mine were perfect at 10 minutes. I like the middles to be ever so slightly under cooked. I’ll let them cool completely on the cookie sheet so they’ll cook just a tad bit more while keeping the middle of the cookie soft.
Frosting time! Holy smokes, melted butter & powdered sugar…. Honestly what eles do you need out of life?! Maybe a little bit of coco powder…
Microwave 4 tbl spoons of butter for 30 seconds in your microwave. I like it to be super soft, almost all melted, but not quite.
Throw that in a bowl, along with 2 tbl spoons of coco powder, 1 tbl spoon of already made coffee (trust me, it’ll bring the flavor of the chocolate out) 3 cups of powdered sugar, 3 tbl spoons of milk, 1 tsp of vanilla extract, and a pinch of salt.
Mix with your hand/fancy mixer. Don’t be lazy like me, scrap the sides of your bowl.
This made enough frosting for two batches of cookies. Just wanted you to know that because that’s the kind of gal I am.
After your cookies have cooled completely, frost and add sprinkles.
I thought chocolate jimmies would have been cute too, but I went with these because after all they are birthday cookies. Grab a tall glass of milk and enjoy!
