Let’s start this salad by frying up a few slices of bacon in our skillet. A salad can’t be all that bad if it starts with bacon!
After your bacon crisps up remove it from the pan…
But leave the drippings behind.
Throw a diced red onion into your hot pan and saute it on medium heat until it is nice and soft.
Grab a small can of garbanzo beans and drain them…
Now add those to your skillet and while your at it go ahead and put your bacon back in.
Season your beans with tiny bit of salt and a dash of fresh pepper.
Time for some green stuff! In a bowl toss some fresh spinach and halved cherry tomatoes with a drizzle of olive oil…
And a generous amount of fresh lemon. Season your spinach with some salt and pepper.
There you have it, the simplest salad dressing you will ever make! It might seem a little too simple but don’t worry…
This salad gets it’s pop from the warm bean and bacon mixture that has been patiently waiting to dress up that beautiful bed of fresh lemony spinach and tomatoes. Don’t forget to crumble your favorite cheese on top (I used feta) and serve this with a nice big glass of lemon water. Cheers to healthy and tasty eating!
