Let’s start our soup by sautéing 1 diced white onion, 1 diced carrot, and 2 cloves of minced garlic in a few tablespoons of olive oil over medium heat. Once your veggies have softened go ahead and throw in 1 pound of spicy sausage and allow that to brown.
Once your sausage has cooked through, add 1 pound of green lentils to your pot…
1 can of diced tomatoes…
2 quarts of chicken broth…
1 tablespoon of Italian seasoning, salt and pepper to taste, and if you have it around 1 cup of red wine.
Bring your soup to a boil, then allow it to simmer uncovered until your lentils have softened (45-60 minutes).
Once your soup is done turn off the heat, then throw a few handfuls of fresh spinach into your pot.
Give your soup a few stirs, and your spinach will wilt right in!
