Start by heating 1/3 cup of vegetable oil in a large pot.

When your oil is nice and warm sauté 1 diced white onion…

1 teaspoon of chili powder…

1 teaspoon of cayenne pepper…

And 1/3 cup of flour.

Let your onion, spices, and flour cook over medium heat for a few minutes…

Then slowly whisk in 3/4 cup of lager style beer…

I know right?!

And two cups of heavy cream.

Let these crazy, amazing ingredients cook and thicken up for a few minutes.

Cheese time!!

Stir in 4 cups of grated cheddar cheese…

2 cups of grated pepper jack…

And lastly a handful of chopped, pickled jalapeno’s.

Also season this cheese sauce with a bit of salt and pepper.

Stir this golden pot of deliciousness over low heat until it’s smooth and creamy.

I hope your tortilla chips are ready for this!

This nacho cheese makes a really great dip…

And of course a killer plate of nachos!

P.S It’s fathers day this Sunday and if the dad in your life isn’t a breakfast in bed kinda guy, I’m betting he might be a nacho cheese guy instead! Happy fathers day to both my husband and my dad. I am beyond lucky to have such a caring father and to also be married to a man who is one of the greatest dad’s I know.

  • 1/3 cup vegetable oil
  • 1 diced white onion
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 1/3 cup all-purpose flour
  • 2 cups heavy cream
  • 3/4 cup lager-style beer
  • 4 cups grated cheddar cheese (about 1 pound)
  • 2 cups grated Pepper Jack cheese
  • handful pickled, chopped jalapeno's
  • Coarse salt and freshly ground pepper

    OH MY GOODNESS!!!! I think I need that today :) I’ve never really been one for pregnancy cravings, but this is really causing me to re-think my granola and yogart lunch. ;)

    My favorite thing about this recipe is all the preservatives and things you shouldn’t eat that you miss out on by making your own nacho cheese! …that isn’t the most grammatically correct sentence, but you get the idea!
