Spa Salad

Grab yourself a pretty plate and pile it high with some spring mix lettuce.

Looks fancy already.

For the savory element in this salad I diced up a few slices of my favorite salami.

Let me tell you why this is my favorite salami. First off I can cut it as thick as I want, and more importantly it reminds me of my Grandpa. When my sister and I were small sometimes my grandparents would babysit us. Whenever we wanted a snack my Grandpa would slice us off a huge piece of salami, hand it to us paper and all, and tell us to go play on the freeway.

My Grandpa was a pretty cool guy.

Toss the salami on top of your lettuce.

For the sweet part of this salad I sliced up a Granny Smith apple. These apples are my favorite combination of sweet and tart & I love the color of their skin!

Fan them across your lettuce. That’s right be fancy about it!

For the crunchy (and healthy) part of this salad I added some chopped raw walnuts.

Seriously though, do you know how good walnuts are for you? Super good! Google it, you’ll see.

Add those to your salad.

Playing the decadent roll in this salad I’d like you to meet one of my favorite cheese’s, chavrie.

Don’t let the goat cheese part scare you! This soft cheese is creamy, slightly tangy in flavor and goes well with just about anything. Pizza, pasta’s, brownies….

Dollop a nice amount smack dab in the middle of your salad.

Yes, dressing from a bottle would be fine but let’s round this salad out perfectly with a tart & bright lemon vinaigrette.

In a small bowl whisk together a few tablespoons of olive oil, a spoonful of dijon mustered, a splash of red wine vinegar, squeeze in half a lemon, and season this all with some salt and pepper. Don’t forget to taste it before you pour it on your salad! Tasting too oily? Add a bit more lemon.

Grab a fork, a cloth napkin, and sit down to relax for a second. My mom is forever telling me the laundry will always be there, but a moment to catch your breath won’t be.



  • Spring mix lettuce
  • Few slices of diced salami
  • Few slices of Granny Smith apple
  • Handfull of chopped walnuts
  • Spoonful of chavrie cheese
  • Lemon vinaigrette
  • 1 episode of Housewives of Miami reunion show.
