Let’s get this french toast started by slicing up some thicker slices of regular ol’ french bread.

Next whisk together a few eggs, some heavy cream, a handful of parmesan, some fresh chopped parsley, and a dash of salt and pepper.

Soak your french bread slices in this heavenly mixture!

Grab a pan and in it melt a nice pat of butter over medium heat…

Then place your creamy, eggy, savory french bread in that pan.

Cook each side for 2 -3 minutes or until your bread turns golden brown.

Sure you could call that french toast breakfast and mom would absolutely love it, but don’t you think a sauce would make this breakfast even better?

I knew you’d say yes!

Melt  a whole stick of butter in the microwave…

Then separate three eggs and place the yolks into a blender.

Turn the blender on low so the yolks can combine…

Now slowly add your hot butter to the yolks.

Your blender should stay on the whole time!

Now blend in 1/4 teaspoon of Dijon mustard…

The juice of one whole lemon…

And a dash of cayenne pepper.

Turn your blender off and try your homemade hollandaise sauce. Kind of amazing huh?

Sure a slice of that savory french toasts drizzled with the hollandaise sauce would totally impress mom, but don’t you want to blow her away?

Of course you do!

Very quickly sauté a handful of fresh spinach…

And fry up an egg.

Or you could be seriously fancy and poach an egg!

Ready for this?

Stack a couple french toast slices on a pretty plate, then top it with your sauteed spinach.

Place the fried egg on top of that…

And don’t be stingy with the hollandaise sauce!

A breakfast in bed any mother would love!!

Happy mothers day to my own mom. Thank you for telling me to nap when I am exhausted, whipping up a meal for me when I am hungry, fixing me a drink when I am happy and knowing which of these I need the most just by looking into my eyes. I love you so much!
