Salad for One

If we’re going to make a salad, we’re going to need to start with a bowl full of fresh veggies!

Spinach, spring mix, sprouts, tomatoes, cucumber, carrots, celery, avocado, red onion, mushrooms….

You get the picture!

Fresh or dried fruit will alway help balance out a normally savory salad and turn it into something restaurant worthy!

Apples, pears, strawberries, blueberries, grapes, raisins, craisins, and dates, yum!

Proteins, grains, and beans will give your salad an added oomph, and will also help keep you full until snack time!

Whole grain pasta, quinoa, rice, beans, hard boiled eggs, walnuts, almonds, sunflower seeds, canned tuna, cooked chicken, gotta have it!

A touch of these savories keep your salad fun!

Olives, peperoncinis, capers, marinated artichoke hearts, feta, blue cheese, cheddar, parmesan…

And last but not least, a quick homemade dressing to complete your lunch time masterpiece!

Olive oil, balsamic, red wine vinegar, seasoned rice wine vinegar, lemon, herbs, and a touch of brown sugar to help keep things exciting!

My current go-to salad!

A big bed of mixed greens topped with canned albacore, a handful of raw walnuts, a dash of crumbled blue cheese, sliced cucumber, a hard boiled egg, and a few salty capers! Dressed simply with some lemon juice and olive oil and lunch time is taken care of!

This spinach pasta salad comes together fast when I want something a little different.

Start by boiling 1 cup of whole grain pasta. While you are waiting for your pasta cut up a few slices of salami, a handful of cherry tomatoes, fresh spinach, and few peperoncinis. Drain your cooked pasta and combine all your your ingredients in a big bowl. Add some shredded parmesan cheese and dress with this simple garlic vinaigrette dressing!

Vegetarian taco salad, one of my favorites!

Start with a crunchy bed of romaine and to it add sliced cherry tomatoes, black beans, sliced olives, avocado, shredded cheddar cheese, and a few crumbled tortilla chips. Top this salad with a dollop of sour cream and salsa and you’ll totally forget about that mega burrito you wanted earlier!
