Let’s start this pasta salad by throwing a cup of orzo into a boiling pot of salted water.

Because of it’s tiny shape this pasta only takes a few minutes to cook so don’t walk away from it for too long!

Next let’s roast some veggies!

Cut up one head of cauliflower, drizzle it with olive oil and season it with a touch of salt and pepper. Pop this into a 400 degree oven for 15-20 minutes.

Slice up a few carrots (I used my mandoline but you could use a knife!) season them with salt, pepper and olive oil them up. Go ahead and place your carrots in the hot oven next to the cauliflower for 10-15 minutes.

Normally I would have no problem throwing all of the veggies onto one baking sheet, but our carrots will be out of the oven before our cauliflower!

No salad is complete without croutons but no way are we going to throw just any old croutons on this salad! Let’s make our own!

Start by cubing half a loaf of french bread…

You could totally cube the whole loaf and save your unused croutons for later!

Cover your bread generously with olive oil and season it up with a teaspoon of garlic powder. Also add a bit of salt and pepper to taste…

Add a handful of parmesan! Give this bowl of beautiful home made croutons a good mix!

Pop these babies on a baking sheet and put them in your 400 degree oven for 10-15 minutes.

While everything in the oven finishes up let’s make a quick garlic dressing for our salad.

In a bowl whisk together 1/3 cup of olive oil, one heaping tablespoon of dijon mustard, two minced garlic cloves and salt and pepper to taste.

Time to put this dish together!

Combine your cooked orzo, roasted cauliflower and carrots.

Next add a handful of capers…

Some fresh basil…

And one more big handful of parmesan cheese!

Toss the salad with the vinaigrette and don’t forget your homemade croutons!

So much better than the ones at the grocery store huh?

This salad pairs well with long days in the sun, BBQ chicken, tri tip or even some seafood.

You can also serve this warm or cold, totally your call!



  • 1 cup cooked orzo
  • 1 head of cauliflower roasted
  • 2-3 sliced carrots roasted
  • capers
  • fresh basil
  • parmesan cheese
  • garlic dressing
  • garlic, parmesan croutons
