Heat some olive oil in a pan and saute one diced onion until it is soft.
I know this might feel like a weird way to start off making nachos, but trust me it’ll all work out.
This is chorizo. What is chorizo you ask? Well mi hija, (cooking with chorizo brings out the hispanic mother in me) it’s sausage most commonly made with pork and is well seasoned with chili’s and spices. It can also be made with beef and for my vegetarian friends soy.
I love my vegetarian friends. They keep me on my toes.
Add about 5 ounces of chorizo to your hot pan. You can add as much as you want, but be warned this stuff is rich!
After your chorizo has cooked up a bit (about 5 minutes) add a can of refried beans to the pan.
I prefer the black refried beans to the tradition pinto bean style because of the high nutritional value of the black bean. I read somewhere the darker the bean the better it is for you, also I love their rich flavor.
Once your beans, onions, and chorizo are well mixed find a casserole dish and spread your mixture on the bottom of it.
Did you notice I didn’t season the onions or beans with anything? All the seasoning we need is in the chorizo! Pretty easy huh?
Now grab some tortilla strips and dig them into your beans mixture. Your going to want to use a sturdier chip vs. a thin restaurant style chip.
Sprinkle a cup of cheddar on top…
and a cup of pepper jack cheese on your chips.
Now dice up some jalapenos…
and put them in your nachos.
Not “on” but “in”! Really get in there and place them in between your chips.
Toss a handfull of sliced olives on top and pop this yummy dish into a 350 degree oven for about 10 minutes or until your cheese has melted.
Don’t dig in yet! I want to add a few more things and I promise they’ll be worth it.
Have I steered you wrong yet?
Dice up one avocado…
and one tomato…
and throw them on top.
Last but certainly not least chop up a handful of cilantro…
and garnish your nachos with this wonderful pungent herb.
Some people think it taste like soap, but I love it.
Now go ahead and dish up! You’ll also want to grab a fork for these nachos & don’t forget a nice dollop of sour cream!
