Angel hair pasta

Bring a big pot of salted water to a boil & boil yourself up some pasta. I used angel hair, but penne would work great too!

sauté onions

Heat some olive oil in a skillet, and saute one red onion for a few minutes. Red onions are so good and I just don’t use them enough.

I need to change that…

Chicken & garlic

Next dice up some boneless, skinless, chicken breast and throw that into your pan along with some garlic. Season this a bit with salt and pepper.

It’s starting to smell good huh?

Chicken broth

Once your chicken has browned a bit throw in a 1/2 cup of chicken broth & scrape (deglaze) the bottom of your pan.

Tomatoes & olives

Now throw in some whole cherry tomatoes, and some halved kalamata olives.

You don’t like kalamata olives? Hmmm, that’s too bad because they are really good. You can use black olives if you want.

Bring your pan to a simmer and cover it with foil for 20 minute


While your chicken is simmering lets make a dressing to pour over this pasta.

In a small bowl whisk together some olive oil, balsamic vinegar, dijon mustard, a splash of fresh lemon juice, and a pinch of salt and pepper. Taste it! Does it need a little more of anything? Add it! Don’t be shy, I trust you.

Cook in

Uncover your chicken & holy smokes how good does that look? If a few of your tomatoes haven’t burst, go ahead and smash them with the back of your spatchula. POP!

(side note: this is my favorite spatula ever.  Just cause it has a Christmas candy on it, doesn’t  mean its for Christmas cookies only.)

Fold in

In your pasta pot combine your chicken, pasta, and dressing. Give this a good stir.

Mediterranean Pasta

Get out your prettiest, girliest dish and dress this pasta up with some crumbed feta cheese & fresh basil.

Look at that. Totally girlie pasta without being teeny, tiny, lame pasta. Enjoy!


  • 1 pound of pasta
  • 2 boneless, skinless chicken breast cubed
  • 1 red onion
  • 1 tbl spoon of garlic
  • 1 package of whole cherry tomatoes
  • 1 handfull of halved kalamata olives
  • 1/2 cup of chicken broth
  • olive oil
  • sea salt, fresh ground pepper to taste
  • crumbed feta cheese
  • fresh chopped basil
