Let’s start by scrambling 2 eggs over medium heat…
Once your eggs have scrambled, transfer them to a plate and heat a couple tablespoons of stir-fry oil in your pan.
Over medium heat sauté 1 diced white onion and 1 chopped carrot.
Once your veggies have softened throw in 1 clove of minced garlic…
And a few handfuls of baby kale.
Don’t be afraid to fill your pan with kale, it will all cook down!
After your kale has cooked for a few minutes, add 2 cups of cooked rice.
Day old, cold rice works the best for fried rice!
Stir your rice into your veggies and oil, then add a few tablespoons of soy sauce to the rice…
Don’t forget about your scrambled egg!
