Lets start with the salsa!

Q: Can I use pre-made salsa?

A: Sure! But this will only take you a few minutes so if you have the time why not?

Throw a few roma tomatoes, half a white onion, and half of a fresh jalapeno pepper (minus the seeds) into a food processor.

Now add a handful of cilantro…

And a squeeze of fresh lemon. Lime would have been super good too!

Add a little bit of salt and pepper…

Now pulse until you have salsa!

I think I might have pulsed mine a little too much…

Now for our tortilla.

Pour a few inches of vegetable oil into a pan and let it heat up. How will you know when it’s hot enough? Flick a little water in the oil, when it sizzles it’s ready.

Fry your tortilla on both sides…

Then let it drain on a paper towel for a few minutes.

Eggs. Fry em.

I like mine sunny side up, but you might like yours over easy. Or over medium.

Totally your call.

Place your crispy tortilla on a baking sheet, then top it with a couple spoonfuls of whole black beans.

Throw your eggs on top of that…

Now sprinkle some cheddar cheese on top.

Place this under the broiler for a few minutes just until your cheese melts.

Is your cheese nice and melty?

Put a nice big swirl of sour cream on top…

And please don’t forget your fresh (jarred is totally fine too!) salsa.

  • 2 fried eggs
  • shredded cheddar cheese
  • sour cream
