Let’s start by marinating our chicken in buttermilk and 1 teaspoon of cayenne pepper. The enzymes in the buttermilk will tenderize the chicken, and the cayenne will spice things up a bit!

You can let your chicken marinate for as little as 2 hours or as long as overnight.

When you’re ready to start cooking, in a shallow pan combine 1 cup of all purpose flour…

1 cup of panko…

1 teaspoon of garlic powder…

1/2 teaspoon of cayenne pepper..

And 1 teaspoon of salt.

Whisk those ingredients together…

Then roll your marinated chicken in your flour mixture until they are completely coated.

In a large frying pan, heat 3 – 4 cups of vegetable oil over medium heat. Before you pop your chicken in, test your oil by flicking a few drops of water into it. If the water sizzles, it’s ready!

Fry your chicken until it is golden brown (about 5 minutes on each side)…

Then place it on a cookie sheet.

Place your fried drumsticks into a preheated 400 degree oven for 20 minutes or until it’s juices run clear.

Allow your fried/baked chicken to drain on a few paper towels before digging in for dinner!

It’s good to be home, but it’s even better to get back to work!
