Let’s start by slicing up our pretty zucchini and then giving it a quick dip in some egg.

Next mix together 1 cup of bread crumbs, 1/2 cup of flour, 1/2 cup of shredded parmesan and a bit of salt and pepper.

Go ahead and dredge your zucchini through this mixture!

Heat a few inches of vegetable oil in a pan and quickly fry your zucchini in batches…

It should only take a few minutes for your zucchini to brown and crisp up!

When it’s done let it drain on a few paper towels and try your hardest not to eat it all before dinner time!

Let’s get a sauce going for this dish!

Heat a few tablespoons of olive oil in a pan and sauté 1/2 diced white onion…

And a few cloves of minced garlic…

Once you’ve given your garlic a few seconds to cook go ahead and add 1 cup of white wine to the pan…

And 1/2 cup of heavy cream!

I have the biggest crush on heavy whipping cream right now.

Now add 1 tablespoon of dijon mustard to your sauce…

And the juice of half a lemon!

I don’t know what your going to like more, the fried zucchini or this creamy, lemony sauce!

Add a pinch of salt and let this sauce simmer and reduce for a few minutes.

Are you ready to eat?

Combine your pasta, sauce, and zucchini on a pretty platter…

Then dish up! I went ahead and threw a little more parmesan on top.

I don’t think they’ll be any leftovers tonight!

  • 1 pound of spagetti
  • 3-4 medium zucchini
  • 2 eggs, beaten
  • 1 cup of bread crumbs

  • 1 cup white wine
  • 1/2 cup heavy cream
  • 1 tablespoon dijon mustard
  • 1/2 lemon
  • sat and pepper to taste

    We have a garden overflowing with these monsters… and although we do manage to push them off on friends, family, neighbors, and anyone who forgets to roll their windows up in store parking lots (just kidding on that last one), this is a cool way to use a bountiful, summer vegetable!
