Let’s start this dinner by adding some orecchiette to a big pot of boiling, salted water.

I just love this pasta! Orecchiette means “little ears” and its shape really helps to scoop up any sauce it’s served with.

Next in a hot skillet brown 1 pound of Italian sausage.

I used mild sausage but go ahead and use “hot” if you like things on the spicy side!

After your sausage has been browned add 1 diced onion…

A few cloves of minced garlic…

And a small palmful of red pepper flakes. I guess I did want mine a little spicy after all!

Let those saute for a few minutes or until you can smell your garlic.

Now roughly chop up some broccolini and add this to your pan.

If you can’t get your hands on any broccolini regular ol’ broccoli would be just as good!

While our veggies are quickly sauteing let’s whip up a slurry to deglaze our pan with!

Whisk together 2 tablespoon of flour with 2 cups of chicken broth…

Now add it to your pan and bring everything to a simmer.

I added a touch of flour to the chicken broth because I wanted this cream sauce to be on the thicker side.

Speaking of cream…

Go ahead and add half a cup of heavy cream to your sausage and veggies.

If you want to add more than a half cup go right ahead, I really don’t think anybody will mind!

Let your sauce simmer for a few minutes then finish this dish off with a handful of chopped smoked almonds…

A little unexpected but so, so good!

A handful of fresh chopped parsley…

Not too out of the ordinary but always welcomed!

And last but not least a nice big handful of fresh grated parmesan cheese.

An explanation is never needed for parmesan cheese.

Have you noticed I haven’t asked you to season your dish with salt or pepper yet? While I am a big fan of  salt and pepper, sausage and parmesan cheese tend to have quite a bit of both in them. It would be a shame to over season this sauce so I waited until the end to see if it needed anything. It did but just a pinch of salt!

Top your orecchiette with this lovely, creamy, dreamy sausage and broccolini!

I went ahead and grated a touch more parmesan cheese on top of mine. Again, an explanation for more cheese is never necessary.



  • 1 box orecchiette
  • 1 pound Italian sausage
  • 1 diced onion
  • 2-3 cloves minced garlic
  • small palmful red pepper flakes
  • 1 bunch broccolini
  • 2 cups chicken broth mixed with 2 tablespoons flour
  • 1/2 cup heavy cream
  • chopped smoked almonds
  • fresh parsley
  • parmesan cheese
  • salt and pepper to taste
