Get a big pot of salted water boiling and get your pasta going. I used gemelli this time.

Gemelli means “twins” in Italian and it works great in a baked pasta dish.

In a hot (well loved) pan fry up 4 slices of chopped bacon. Put aside when it’s finished cooking & try very hard not to snack on it while your putting the rest of this dish together.

Might as well cook 5 slices since you know your going to eat some.

In the same pan throw in one diced onion & saute that for a few minutes.

Yes your going to cook it in the bacon fat.

No I don’t care that bathing suit season is just around the corner.

Yes I love bacon fat more than bathing suit season.

When your onions are clear add to your pan 3 to 4 diced chicken breast, some minced fresh garlic, and season this all with salt and pepper. We’re just going to brown the chicken here, so don’t worry about cooking it all the way through on this step.

After your chicken has browned throw in one can of diced tomatoes and one can of tomato sauce. Season this with a pinch more salt and pepper & don’t forget to scrape the bottom of your pan with the spatula. That’s where all the good stuff is!

Let’s season this up a bit more with a palm full of dried basil…

and a taste of red chili flakes.

Be careful with these bad boys. Your dish can go from delightfully spicy to “how the heck am I suppose to eat this?!” very quickly.

Let your sauce and chicken simmer for about 15-20 minutes. Here is where your chicken will cook through.

When your sauce is done simmering take it off the heat and pour in half a cup of heaven.

Oops, I mean heavy cream.

Did you leave some bacon for your dish? You did?! Good for you!

Stir that in your sauce along with a handfull of parmesan cheese. By the looks of this shot I must have super big hands.

Combine your gemelli and sauce in a (well loved) baking dish…

and top with a bit more parmesan cheese.

Pop this into a 350 degree oven for about 20 minutes or until it’s bubbling.

There you have it! Serve this with some crusty bread and pat yourself on the back for throwing together a super yummy weeknight dinner.



  • 1 package of gemelli pasta
  • 4-5 slices of chopped bacon
  • 1 diced yellow onion
  • 3-4 diced chicken breast
  • 3 cloves of garlic
  • palm full of dried basil
  • red chili flakes to taste
  • 1/2 cup of heavy cream
  • 2 cups of shredded parmesan cheese
  • salt and papper to taste
