In your crockpot start with 1 small sliced onion…
1 clove of minced garlic…
1 can of tomato sauce…
1 cup of chicken stock…
3-4 diced chipotle peppers…
The heat lives in the seeds, so before you start dicing up your peppers go ahead and de-seed them first!
Last but not least 1 teaspoon of cumin, and salt and pepper to taste.
Go ahead and taste this sauce before you pop your raw poultry in. Does it need a bit more cumin, another pepper? Now is a good time to add it!
Nestle three boneless skinless chicken breast into your crockpot and either set it on low for six hours or high for four hours.
Later that afternoon…
Simply shred your chicken with a potato masher…
Warm a few tortillas, set out a couple of topping, (sour cream, avocado, shredded cheese, cilantro, grilled corn, salsa, ect…) and grab a handful of tortilla chips because dinner is ready!
