Since we’re going to be using quite a bit of tarragon in this recipe I figured I should properly introduce you two.

Fresh tarragon has a very mild black licorice taste to it. I’m not a fan of black licorice (gag!) but I do love this herb.

The French refer to it as “The king of herbs” and it pairs well with other herbs such as parsley and chives. It also taste fantastic in egg and fish dishes.

In a bowl whisk together 1 cup of olive oil, a handfull of chopped tarragon leaves, juice of half a lemon and salt and pepper to taste.

Don’t forget to taste it to make sure it has enough salt and lemon.

Get yourself a whole cut up chicken from your grocery store. If you can’t find any cut up, grab a whole chicken and ask your butcher if they could cut it into pieces for you. Don’t be shy! Butchers are super friendly.

Take the skin off your chicken and place it on a baking sheet covered in wax paper. Now rub your olive oil mixture on the chicken and pop it into a 400 degree oven for about 30 minutes.

That roasted chicken would make a very nice dinner, but we have big plans for this chicken. Big!

After your chicken has cooled down a bit go ahead and debone it…

and then chop it all up.

This is a lot of chicken, so I only used half of it & put the rest in the fridge for another day.

Throw your chopped chicken in a bowl along with half of a diced shallot…

a few more (about 10) leaves of chopped tarragon…

the juice of half a lemon…

and a few dollops of mayo. Stir in a few tablespoons of mayo at a time. Mine was perfect at 3 1/2 tablespoons, but you may like more (or less!).

Add a pinch more salt and pepper, (so cute huh?) and taste it to make sure it dosent need anything else.

Cover your bowl with pastic wrap and throw it in your fridge for a few hours to let all these flavors blend.

I choose a heart for the shape of these tea sandwiches, but you can pick any shape you want. A circle, a rectangle, a person…ewww creepy.

Find yourself some nice white bread and cut them into whatever shape you want.

Now my sister-in-law’s mother-in-law (got that?) would absolutely DIE if I wasted all this bread. So in order to put her mind at ease I saved the crust to make homemade bread crumbs for later.

Grab some roasted, salted almonds. Any kind will do, but I just had to show you these. They are not as salty as a smoked almond but they taste so amazing! The onion and garlic flavor is not overpowering at all, it’s just perfect.

Chop em up!

Grab a heart and spoon a lady-like amount on top. In my experience the ladies I hang out with love to eat, so don’t be stingy with the chicken!

Now garnish with your chopped almonds.

They are almost too pretty to eat! Almost…

  • 1 bunch of fresh tarragon
  • 1 whole cut up chicken
  • 1/2 shallot
  • 1 lemon
  • 3-4 tablespoons of mayo
  • 1 loaf of homemade type white bread
  • salted, roasted almonds
  • salt and pepper to taste.
