Let’s start with the dry ingredients…

In a bowl whisk together 2 cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.

In another bowl mix together 1/2 cup of white sugar and 1/2 cup of brown sugar.

In your bowl of sugars beat in 2 eggs and 1/2 cup of room temperature butter until your mixture is smooth.

Judging by the lumps my butter could have been softer. Oops.

Now add 1 1/4 teaspoons of vanilla…

1 teaspoon of cinnamon…

And 1/3 teaspoon of nutmeg.

Peel and dice 1 1/2 cups of apples.

How many apples is that? Lets say 3 small apples because that’s how many I used.

What kind of apples should you use? How about fuji because that is also what I used. Granny smith would be good too!

Mix everything together!

Time to gradually blend in your flour mixture.

Please note this is not your average muffin batter. There are lots of apples in here and you’ll really have to use some elbow grease to get everything mixed together. I know you can do it!

Line a muffin pan with paper cups and fill them halfway with your mixture.

Unwrap some caramels and place one in the middle of each muffin.

Are you getting excited about these muffins yet? You should be!

Cover the caramels completely with another spoonful of muffin mixture.

You really want to make sure the caramels are covered so the caramel dosen’t leak out while it’s baking. That would be a shame.

Pop your muffins into a 375 degree oven for 20 minutes or until a toothpick inserted in the (almost) center comes out clean.

Melted caramel, cinnamon, nutmeg, and apples. Yum! I honestly didn’t know if I should call these apple muffins or apple cupcakes! Hmmm, I guess you could throw a little frosting on top and make them for a birthday party instead of breakfast.

Sometimes options are better than plans.
