Lets start with half a diced red onion…

To this add half a diced cucumber and one diced red bell pepper.

Now throw in some mango…

A fresh seeded jalapeno pepper…

Half a can of drained black beans, and a handfull of chopped cilantro.

Now squeeze the heck out of a lime into your bowl of fruit and veggies…

And season your salsa with a bit of salt and fresh pepper.

And now you have a very yummy appetizer….

A super pretty salad….

Or a quick, colorful, and healthy weeknight chicken dinner to whip up after soccer practice. Look at that, three different dishes from one little salsa!
