Let’s start by slicing up four strips of bacon and frying them up in a hot skillet.

Go ahead and remove them once they crisp up…

But make sure you leave a couple tablespoons of bacon drippings behind. You’ll want it there so you can next sauté 1 sliced onion…

2 cloves of minced garlic…

And 2 cups of fresh, chopped spinach!

Go ahead and season your veggies with a little salt and pepper. Remove your spinach from the skillet once it has wilted down…

Then thrown 2 tablespoons of butter into your empty skillet.

Sprinkle 2 tablespoons of flour over your melted butter and whisk the two together over medium heat until your flour has cooked through (about 1 minute).

Now slowly whisk in 1 1/2 cups of milk and allow this mixture to thicken up over low to medium heat (about 2 minutes).

Go ahead and take your skillet off the heat and stir in 2 cups of shredded cheddar cheese…

Your sautéed spinach and onions…

And don’t forget that bacon!

We’re going to pop this dip into a 400 degree oven oven for about 15 minutes, but before we do that let’s sprinkle just a little bit more cheese on top!

Hot out of the oven and perfect!

My friends and I kept it real by enjoying this pipping hot dip right out of the skillet.

Who needs pretty plates or cloth napkins when the dip is this good?!



  • 4 slices bacon, cooked
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped
  • 2 tablespoon butter
  • 2 tablespoons flour
  • 2 1/2 cups cheddar cheese, shredded
